Merlot grapes were whole bunch pressed to ensure a low pick-up of colour and a clean juice. After settling the juice was fermented using a neutral yeast and fermentation stopped with a small amount of residual sugar. Colour was adjusted using a small amount of Tempranillo wine along with a small amount of Muscat wine for aromatics. The wine was bottled in July 2015.
Salmon pink. Aromatics of strawberry, cream and the delicate perfume of white flowers. The palate is medium bodied with a soft but rich texture. Finishing slightly off dry.
