The ‘flagship’ Bordeaux Blend named after the Dam at the base of the vineyard. A blend of 55% Merlot, 35% Cabernet Sauvignon and 10% Cabernet Franc, the late-harvested fruit hand-picked from the company’s north facing slopes, fermented to 13.5% alc., the wine spending 28 days on skins post ferment and aged 10 months in French oak. Full, even, dark ruby-red colour, a little lighter edged. This has an elegant and fragrant nose with rich and ripe aromas of black and redcurrant fruit melded with spicy black plum notes. Nuances of savoury herbs and smoky oak notes are harmoniously interwoven with the fruit. Medium to medium-full bodied and elegantly proportioned, stylishly presented fruit flavours of ripe blackberries, plums, spices and fragrant, cedary oak feature on the palate. Fine-grained tannin extraction and structure forms an elegant core and line with the fruit, and soft, ripe acidity enlivens the fruit sweetness as it carries to a long, lingering finish of black plums. This is an elegant, gently succulent, harmonious Bordeaux-blend with fine tannin structure. Match with roast lamb and beef over the next 6-8+ years.
